Make Pasta Primavera Tonight For A Perfect Spring Dinner That Stays Light

Cream pasta and I have had a complicated relationship. Every time I make it, the sauce either breaks in the pan or lands so heavy I'm horizontal by 8pm. At some point, I just stopped trying.

Pasta Primavera fixed that for me, and this is the best time of year to make it. Asparagus is still cheap and the cream-lemon sauce keeps the whole thing tasting like spring.

One pan does most of the work, and the steps move faster than I expected:

  • Cook asparagus and zucchini in a hot pan until the edges brown, about two minutes

  • Add garlic for 60 seconds, then cherry tomatoes until they soften and release juice into the pan

  • Pull the pan off heat, add the drained pasta, lemon, and parmesan, then toss until the sauce coats everything

The Sauce Move I Wish Someone Had Told Me Sooner

Most home cooks skip the pasta water step and then wonder why the sauce slides right off the pasta:

  • Starchy pasta water emulsifies fat and liquid into a sauce that coats
